Frozen vs. Fresh– Since our continuous process requires cooking, the finished stuffings can reach temperatures of upwards of 100° prior to packaging. We reduce this temperature to 40° within 2 hours, then freeze. This ensures a 5-6 day shelf life after defrosting without adding chemicals for extended shelf life. Yes. it may be a small merchandising plus to say “The Product is Fresh” but the most important thing is the product and what the consumer is eating? We believe it is easier (and SAFER) to defrost a small amount of product daily than to have a quality issue with a product that could have not been rotated, mishandled, or beyond its code date............something to think about.
  • Quality Standards

    In addition to being HACCP certified, OCEANS CUISINE, with the help of CALIFORNIA MICROBIOLOGICAL CONSULTING (CMC INC.) and Mr. Cliff Coles, recognized as a quality control/microbiological/food safety expert in the food industry, has analyzed each of our products; broken down each ingredient, and set a standard for our raw materials. This insures a consistency of finished product and helps maintain the OCEANS CUISINE standard of quality.

  • Trans Fatty Acid

     

    With the new FDA labeling regulations CMC has preformed an analysis on each of our products and reformulated the recipes to eliminate the TRANS FATS (without changing the flavor profile).  We can now state “0” Trans Fats on all our labels.
